Every week we invite the best chefs to take part in our Cheap food peculiarity. Today we speak to Chris Cleghorn of the Michelin-starred Olive Tree restaurant in Bath. picks out her favorite cheap eats in Somerset and Wiltshire.

Hello Chris! What’s your favorite cheap meal to make at home when you have a sleepover?

Depending on the time of year, I don’t think you can go wrong with a great salad.

My favorite quick dish is cornflake-wrapped chicken with goat cheese, pear, hazelnuts, roasted broccoli, lettuce and honey mustard dressing.

Method

1. Cut the chicken breast into long thin strips about 2 cm thick.

2. Lightly flour and shake off excess.

3. Dip into the egg mixture and then directly into the crushed cornflakes.

4. Place on a baking sheet on parchment paper and bake in an oven preheated to 220°C until done.

The honey and mustard dressing can be prepared in batches and stored in the refrigerator for a week. This is how I do it…

  • 1 teaspoon Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 tablespoon honey
  • 200 ml olive oil
  • Pinch of sea salt

What are your favorite places around Bath where you can eat lunch for two for under £40?

Confectionery in a custard box in Bath – we love going to their Entry Hill cafe on a Sunday morning for coffee and a choux pastry. It’s hard for me to choose a favorite, but if I had to choose, it would be the classic lemon meringue pie.

But don’t miss their weekly choux bun special, which is usually amazing.

At Entry Hill you can also enjoy savory custard buns, my favorites being the potato, bacon and maple.

Plus, we also go and enjoy their wares in Alexandra Park on a Sunday morning. It offers stunning views of Bath.

Hartley Farm StoreBradford-upon-Avon is just 15 minutes from Bath and with two young boys this place is a huge hit with everything in one place.

They lovingly created the Barn to enjoy your food.

My favorite breakfast foods are French toast, apple compote, bacon and maple syrup. I recommend paying £2 extra and adding a fried egg and jalapeño.

For lunch, they use their own beef to make the Herd to Win Burger – Hartley beef patty, tomato, lettuce, burger sauce, brioche bun, fries and house salad.

Nearby is their farm shop selling local produce, with a play area for children and the family’s old tractor.

Bakery LandraceBath – Landrace Bakery for me represents the idea of what artisan products are.

Their amazing craftsmanship stands out – bread and pastries made fresh from the finest ingredients. Worth stopping by as a quick stop for some baked goods to go. My personal favorite is their cinnamon roll. But get there early to make sure they’re still there – they’re that good.

You can also enjoy a light brunch with a few small plates, allowing you to stay within your budget. Alternatively, adding a large plate to the selection is best for dinner, but it will set you back £40.

But it’s definitely worth the splurge as you get to watch your food being prepared by a small team of chefs. Their cheddar cheesecake pancakes are worth stopping by!

How did you get into chefing?

From a young age I always wanted to become a chef. I loved food and was always interested in watching cooking programs and learning more about food.

I was never an excellent student in school, but I loved art and cooking. After experience working in the kitchen, it became clear that this is exactly what I want to do.

I took a full-time course at college while working at a local two-outlet restaurant.

At 18, I completed an internship at a three-Michelin star restaurant. It was a learning experience, but I loved every minute of it.

I have never seen such attention to detail, thoughtfulness of the dish and quality of products. I didn’t have the confidence to work there at the time, but it set me on the path.

Over the next 10 years I continued to learn from some amazing chefs, learning my craft and learning about the business before becoming a chef myself.

We’ve spoken to plenty of top chefs – check out their cheap eats from around the country here…
